Preheat oven to 400 degrees.
Combine the flour, cocoa powder, sugar, baking powder, chocolate chips and salt. In a small bowl beat the egg until foamy. Add in the soy milk and apple sauce. Combine the two mixtures, blending until the mixture is just moist.
Spoon the batter into lightly greased muffin cups, filling them 3/4 full. Bake for 15-20 minutes, until a toothpick inserted into the center of one muffin comes out clean. Cool in the pan on a wire rack for 5 minutes. Remove muffins from rack and allow them to cool completely before storing. Muffins are great fresh or they can be frozen for later.
This recipe yields 15 muffins. Each muffin provides 140 calories, 26g CHO, 3.5g fat, 3.5g protein, 2.5 grams of fiber, and 54mg sodium.
