Dissolve the yeast in a ½ cup of lukewarm water in a large bowl. Let it stand for 10 minutes. Add the rest of the water, ground flaxseed, oil, honey, and salt. Beat until it is smooth.
Add sunflower seeds and whole wheat flour and beat, slowly add the all purpose flour. Turn the dough onto a flax surface dusted with flour and knead for 8-10 minutes.
Place the dough in a large lightly greased bowl and cover tightly with plastic wrap. Let it rise in a warm place until it is doubled in size (30-40 min.)
Preheat the oven to 375 degrees Fahrenheit.
Punch down the dough. Divide in half, form two long wide loaves. Place on lightly greased baking sheet. Cover with a towel and let it rise for 30 minutes.
Bake for 40 minutes, until lightly browned.
One serving is a one inch slice. Each slice contains 167 calories, 5g protein, 28g carbohydrates, 4g fat and 4 g dietary fiber.
